- 1 14.5 Ounces (oz) can fire-roasted diced tomatoes
- 1 Cup dark lager beer

- 1 Teaspoon (tsp) cumin, ground
- 0.5 Teaspoon (tsp) coriander, ground
- 0.5 Teaspoon (tsp) cayenne pepper
- 0.5 Teaspoon (tsp) garlic powder
- 0.5 Teaspoon (tsp) kosher salt
- 0.5 Teaspoon (tsp) black pepper, ground
- 1 Green bell pepper, minced
- 1 Red bell pepper, minced
- 1 Tablespoon (tbsp) tomato paste
- 1 Cup beef broth
- 1 Tablespoon (tbsp) Worcestershire sauce
- 1 Tablespoon (tbsp) brown sugar
Steps
- Heat the olive oil in a large saucepan over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Use a wooden spoon to break up the meat as it cooks.
- Add the minced onion and garlic to the pan. Sauté until the onion is translucent and fragrant, about 3-4 minutes.
- Stir in the tomato paste and cook for an additional 2 minutes to deepen the flavor.
- Add the fire-roasted diced tomatoes, tomato sauce, kidney beans, and minced bell peppers to the saucepan. Stir to combine.
- Pour in the dark lager beer and beef broth. Stir in the chili powder, cumin, coriander, cayenne pepper, garlic powder, salt, black pepper, Worcestershire sauce, and brown sugar.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 20-25 minutes, stirring occasionally to prevent sticking.
- Taste and adjust seasoning if necessary. If you prefer a thicker chili, let it simmer uncovered for an additional 5-10 minutes.
- Serve hot, garnished with shredded cheese, sour cream, and chopped green onions if desired. Enjoy with cornbread or over corn chips for a delightful chili pie experience.
