- 0.33 Pounds (lb) green bell peppers, sliced
- 0.33 Pounds (lb) red bell peppers, sliced
- 0.33 Pounds (lb) yellow bell peppers, sliced
- 2 Tablespoons (tbsp) olive oil
- 1 Whole zucchini, sliced
- 1 Whole yellow squash, sliced
- 6 Ounces (oz) mushrooms, minced
- 1 Clove garlic, minced
- 2 Medium tomatoes, peeled
- 1 Pinch ground black pepper, to taste
- 1 Pinch salt, to taste
Steps
- In a large pot, cook the penne pasta in boiling salted water until al dente. Drain the pasta, leaving it slightly wet.
- While the pasta is cooking, wash the bell peppers and cut them into 1/4 inch strips.
- In a large skillet over medium heat, add 2 tablespoons of olive oil and sauté the bell peppers until soft, ensuring they do not brown.
