  • 0.33 Pounds (lb) green bell peppers, sliced
  • 0.33 Pounds (lb) red bell peppers, sliced
  • 0.33 Pounds (lb) yellow bell peppers, sliced
  • 2 Tablespoons (tbsp) olive oil
  • 1 Whole zucchini, sliced
  • 1 Whole yellow squash, sliced
  • 6 Ounces (oz) mushrooms, minced
  • 1 Clove garlic, minced
  • 2 Medium tomatoes, peeled
  • 1 Pinch ground black pepper, to taste
  • 1 Pinch salt, to taste

Steps

  1. In a large pot, cook the penne pasta in boiling salted water until al dente. Drain the pasta, leaving it slightly wet.
  2. While the pasta is cooking, wash the bell peppers and cut them into 1/4 inch strips.
  3. In a large skillet over medium heat, add 2 tablespoons of olive oil and sauté the bell peppers until soft, ensuring they do not brown.
