Serving Size: 4
Cooking Time: 25 minutes
Ingredients
- 1 Cup couscous
- 0.5 Teaspoons (tsp) cumin, ground
- 1 Pinch kosher salt, to taste
- 1.25 Cups boiling water
- 1 Whole garlic clove, peeled
- 15 Ounces (oz) black beans, drained
- 1 Cup canned whole kernel corn, drained
- 0.5 Cup red onion, minced
- 0.25 Cup fresh cilantro, minced
- 1 Whole jalapeño pepper, minced
- 3 Tablespoons (tbsp) olive oil
- 1 Pinch fresh lime juice, to taste
Steps
- In a large bowl, combine the couscous, ground cumin, and kosher salt. Pour the boiling water over the mixture, cover with plastic wrap, and let it sit for 10 minutes to allow the couscous to absorb the liquid and become tender.
- While the couscous is resting, heat a small skillet over medium-high heat. Add the peeled garlic clove and toast it until the skin turns golden brown. Remove from heat, and mince the garlic.
- Fluff the couscous with a fork to separate the grains. Stir in the minced garlic, black beans, corn, red onion, cilantro, and jalapeño pepper.
- Drizzle the olive oil and fresh lime juice over the couscous mixture. Toss everything together until well combined. Adjust seasoning with additional salt or lime juice if desired.
- Serve the couscous salad warm or allow it to cool to room temperature. Enjoy as a refreshing side dish or a light main course.
