Cooking Time: 130 minutes

Ingredients

  • 2 Tablespoons (tbsp) pine nuts
  • 2 Teaspoons (tsp) fresh basil, minced
  • 1 Teaspoon (tsp) fresh oregano, minced
  • 1 Cup cooked Great Northern beans
  • 2 Whole garlic cloves, divided
  • 1 Teaspoon (tsp) lime juice
  • 1 Whole roma (plum) tomato, minced
  • 1 Pinch sea salt, to taste
  • 1 Pinch black pepper, to taste
  • 1 Tablespoon (tbsp) olive oil

Steps

  1. In a dry skillet over medium heat, toast the pine nuts until golden and fragrant, about 3-4 minutes. Remove from heat and let cool.
  2. Place the toasted pine nuts, basil, and oregano into a food processor. Pulse 2-3 times until the nuts are finely ground.
  3. Add the cooked Great Northern beans and divided garlic cloves to the processor. Blend until smooth, about 30 seconds to 1 minute.
  4. Pour in the lime juice and add the minced roma tomato. Season with sea salt and black pepper to taste. Pulse 2-3 times until the mixture is smooth and spreadable.
  5. With the food processor running, slowly drizzle in the olive oil until fully incorporated. If the dip is too thick, add a tablespoon of water at a time until the desired consistency is reached.
  6. Transfer the dip to a bowl, cover, and refrigerate for at least 2 hours or overnight to allow the flavors to meld.
  7. Serve chilled with your choice of crackers, vegetables, or as a unique pizza topping. Enjoy the herbaceous and nutty flavors with a refreshing citrus finish.
