- 48 Fresh oysters
- 1.5 Cups beer
- 2 Whole garlic cloves
- 7 Whole black peppercorns
- 1 Pinch seasoned salt, to taste
- 0.5 Cups butter, melted
- 1 Medium onion, minced
- 1 Whole garlic clove, minced
- 10 Ounces (oz) frozen chopped spinach, drained
- 8 Ounces (oz) Monterey Jack cheese, shredded
- 8 Ounces (oz) fontina cheese, shredded
- 8 Ounces (oz) mozzarella cheese, shredded
- 0.5 Cups milk
- 2 Pinches salt, to taste
- 1 Teaspoon (tsp) black pepper, ground
- 2 Tablespoons (tbsp) fine bread crumbs
Steps
- Clean the oysters and place them in a large stockpot. Add beer and enough water to cover the oysters. Add 2 whole garlic cloves, black peppercorns, and seasoned salt. Bring to a boil, then remove from heat, drain, and let cool.
- Preheat the oven to 425°F (220°C).
- Once the oysters are cooled, break off and discard the top shell. Arrange the oysters on a baking sheet.
- Melt butter in a saucepan over medium heat. Cook the minced onion and minced garlic in the butter until soft. Reduce the heat to low and stir in the spinach, Monterey Jack, fontina, and mozzarella cheeses. Cook until the cheese melts, stirring frequently. Stir in milk and season with salt and black pepper.
- Spoon the cheese sauce over each oyster, filling the shell. Sprinkle with bread crumbs.
- Bake in the preheated oven until golden and bubbly, approximately 8 to 10 minutes.
