Ingredients

  • 2 Cups (c) olive oil
  • 1 Cup (c) white vinegar
  • 5 Cloves garlic, minced
  • 2 Tablespoons (tbsp) lemon juice
  • 1 Tablespoon (tbsp) garlic salt
  • 3 Tablespoons (tbsp) crushed dried mint
  • 2 Teaspoons (tsp) salt
  • 2 Tablespoons (tbsp) dried basil
  • 2 Teaspoons (tsp) dried oregano
  • 1 Teaspoon (tsp) fresh-ground black pepper
  • 4 Pounds (lb) chicken, cubed
  • Wooden skewers, soaked

Steps

  1. Gather all ingredients.
  2. In a bowl, whisk together olive oil, vinegar, minced garlic, lemon juice, garlic salt, mint, salt, basil, oregano, and black pepper. Pour the mixture into a resealable plastic bag.
  3. Add the cubed chicken to the bag, ensuring it is well-coated with the marinade. Squeeze out excess air and seal the bag. Marinate in the refrigerator for 24 hours, shaking the bag every 6 to 8 hours to redistribute the chicken.
  4. Preheat an outdoor grill to medium-high heat and lightly oil the grate. Remove the chicken from the marinade, shake off excess, and thread onto the soaked wooden skewers. Discard the remaining marinade.
  5. Grill the skewers, turning every 3 minutes, until the chicken is no longer pink in the center and the juices run clear, about 15 minutes. Ensure an internal temperature of at least 165°F (74°C) using an instant-read thermometer.
  6. Serve hot and enjoy!
