Ingredients

  • 3 Tablespoons (tbsp) honey
  • 3 Tablespoons (tbsp) olive oil
  • 1 Tablespoon (tbsp) fresh basil, minced
  • 1 Tablespoon (tbsp) strawberry jam
  • 0.25 Teaspoons (tsp) crushed red pepper flakes
  • 1 Whole garlic clove, minced
  • 2 Tablespoons (tbsp) red wine vinegar
  • 1 Tablespoon (tbsp) lemon juice
  • 2 Teaspoons (tsp) white sugar
  • 2 Whole Gala apples, cored
  • 16 Jumbo shrimp, peeled

Steps

  1. In a small bowl, whisk together honey, olive oil, basil, strawberry jam, red pepper flakes, garlic, red wine vinegar, lemon juice, and white sugar.
  2. Place the apples and shrimp into a large resealable plastic bag. Pour the marinade over the shrimp and apples, seal the bag, and shake to coat. Refrigerate for 30 minutes.
  3. Preheat an outdoor grill to medium-high heat.
  4. Thread the shrimp and apples alternately onto 4 metal or soaked wooden skewers. Discard the remaining marinade.
  5. Grill the skewers on the preheated grill until the shrimp are opaque, about 5 minutes per side.
  6. Serve immediately over your choice of rice, noodles, or a mixed green salad. Enjoy!
