Ingredients

  • 2 Pounds (lb) fresh green beans, trimmed
  • 0.25 Cups (cup) olive oil
  • 2 Cloves garlic, minced
  • 1 Cup kalamata olives, sliced
  • 2 Whole tomatoes, minced
  • 2 Tablespoons (tbsp) red wine vinegar
  • 1 Tablespoon (tbsp) oregano, minced
  • 0.5 Teaspoon (tsp) salt
  • 0.25 Teaspoon (tsp) black pepper, ground
  • 8 Ounces (oz) feta, packaged
  • 1 Bunch oregano sprigs

Steps

  1. Bring a large pot of salted water to a boil over medium heat. Add the green beans and cook until slightly tender but still crisp, about 8 to 10 minutes. Immediately drain the green beans and plunge them into ice water to stop further cooking. Drain again and place them in a shallow serving dish.
  2. Heat the olive oil in a skillet over medium heat. Add the minced garlic and cook for about 30 seconds. Remove the skillet from heat. Stir in the sliced olives, minced tomatoes, red wine vinegar, minced oregano, salt, and ground black pepper.
  3. Pour the mixture over the green beans and toss until the beans are evenly coated. Sprinkle the packaged feta cheese on top and garnish with fresh oregano sprigs. Chill for at least 3 hours before serving to allow the flavors to meld.
