Ingredients

  • 2 Large red bell peppers, roasted
  • 2 Tablespoons (tbsp) tomato paste
  • 2 Tablespoons (tbsp) mayonnaise
  • 1 Tablespoon (tbsp) sour cream
  • 2 Teaspoons (tsp) vinegar
  • 1 Whole garlic clove, minced
  • 0.125 Teaspoon (tsp) cayenne pepper
  • 1 Pinch salt, to taste

Steps

  1. Preheat your oven to broil.
  2. Place the red bell peppers on a baking sheet and broil them on the top rack of the oven. Use tongs to turn the peppers as each side blackens.
  3. Once blackened, place the peppers in a plastic bag, loosely tied with some air inside, and let them sit for 15 minutes.
  4. Remove the stems and peel the peppers. Discard the cores and seeds, then cut the peppers into wide strips.
  5. In a food processor, combine the roasted peppers, tomato paste, mayonnaise, sour cream, vinegar, garlic, and cayenne pepper. Pulse the mixture until it is almost smooth, about 7 or 8 times.
  6. Taste and add salt if needed.
  7. Refrigerate the dip until you are ready to serve it. Enjoy with your choice of crudités or tortilla chips.
