- Preheat the oven to 400°F (200°C). Prepare two 12-cup muffin tins by coating them with nonstick cooking spray or lining them with paper liners.
- In a large bowl, combine the cornmeal, flour, sugar, baking powder, salt, chili powder, cumin, and garlic powder. Create a well in the center and add the milk, whisked egg, and canola oil. Stir until the mixture is well blended, then gently fold in the shredded cheese.
