- 0.5 Cups shelled pumpkin seeds
- 0.5 Cups shelled sunflower seeds
- 0.25 Cups butter, melted
- 1 Cup onion, minced
- 0.75 Cups celery, sliced
- 0.75 Cups carrot, grated
- 1 Teaspoon (tsp) cardamom, ground
- 1 Tablespoon (tbsp) thyme, dried
- 2 Tablespoons (tbsp) parsley, minced
- 2 Whole bay leaves
- 1 Loaf whole-grain bread, divided
- 1 Cup wheat and barley nugget cereal
- 0.25 Cup cranberries, dried
- 1 Pinch salt, to taste
- 1 Pinch black pepper, ground, to taste
- 2 Whole eggs, whisked
- 2 Cups vegetable broth
Steps
- Preheat the oven to 350 degrees F (175 degrees C). Spread the pumpkin and sunflower seeds onto a baking sheet. Toast the seeds in the oven until lightly browned and fragrant, about 5 minutes.
- Melt the butter in a skillet over medium-high heat. Add the onion, celery, carrot, cardamom, thyme, parsley, and bay leaves to the butter and cook until the vegetables are tender. Remove the bay leaves.
- In a large bowl, toss together the toasted seeds, bread, cereal, cranberries, and vegetable mixture. Season with salt and pepper. Add the eggs and mix. Gradually add the vegetable broth until the mixture is moist but not mushy. Transfer the mixture to a lightly greased casserole dish.
- Bake in the preheated oven until browned, about 30 minutes.
