Ingredients

  • 1 Cup unsalted butter
  • 0.5 Cup white sugar
  • 1 Large egg yolk
  • 1 Teaspoon vanilla extract
  • 0.25 Cup blanched almonds, minced
  • 1.67 Cups all-purpose flour
  • 1 Pinch confectioners' sugar, to taste

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg yolk, vanilla extract, and chopped almonds to the mixture; mix until well incorporated.
  4. Gradually stir in the all-purpose flour until a dough forms.
  5. Roll the dough into a rope approximately 3/4-inch thick.
  6. Cut the rope into 3-inch long pieces.
  7. Shape each piece by rolling it back and forth while gently pressing down with two fingers on each end until it is about 5 inches long, ensuring the center is plump and the ends are thinner.
  8. Place the shaped cookies onto a cookie sheet, bending the ends toward each other to form a crescent 'C' shape.
  9. Bake in the preheated oven for about 20 minutes, or until the edges turn golden brown.
  10. Dust the cookies immediately with confectioners' sugar, then allow them to cool completely on a wire rack.
