Ingredients

  • 1 Recipe pastry for a 9-inch single crust pie
  • 1 Cup white sugar
  • 0.125 Teaspoon (tsp) cinnamon, ground
  • 0.125 Teaspoon (tsp) nutmeg, ground
  • 1 Pinch salt
  • 1 Tablespoon (tbsp) butter, melted
  • 0.5 Teaspoon (tsp) ginger, ground
  • 2 Cups milk, hot
  • 2 Pounds (lb) butternut squash, mashed
  • 3 Whole eggs

Steps

  1. Preheat the oven to 425 degrees F (220 degrees C).
  2. In a small saucepan, cover the butternut squash cubes with water. Bring to a boil and cook until tender, about 15 minutes. Drain, cool, and mash the squash. Measure out 2 cups of mashed squash and refrigerate any remaining amount.
  3. In a mixing bowl, combine the sugar, salt, cinnamon, nutmeg, and ginger. Blend in the hot milk, mashed squash, eggs, and melted butter.
  4. Pour the filling into the unbaked pie shell.
  5. Bake in the preheated oven for 40 minutes, or until a knife inserted in the center comes out clean.
