Ingredients

  • 0.25 Cup cold butter, divided
  • 0.5 Cup all-purpose flour
  • 0.25 Cup brown sugar, packed
  • 1 Teaspoon ground cinnamon
  • 0.5 Cup quick-cooking oats
  • 1.25 Cup white sugar
  • 0.5 Cup butter, divided
  • 2 Whole eggs
  • 3 Ripe bananas, mashed
  • 0.5 Cup buttermilk
  • 1 Teaspoon vanilla extract
  • 2.5 Cup all-purpose flour
  • 2 Teaspoons pumpkin pie spice
  • 2 Teaspoons baking powder
  • 0.5 Teaspoon ground cinnamon
  • 1 Cup nuts, chopped (optional)

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease two 8 1/2 x 4 1/2 inch loaf pans.
  2. To make the streusel topping, mix 0.25 cup of cold butter, 0.5 cup flour, brown sugar, 1 teaspoon cinnamon, and oats in a bowl until crumbly. Set aside.
  3. Cream the white sugar and softened butter together in a bowl, then stir in the eggs. Add the mashed bananas, buttermilk, and vanilla extract, stirring until well blended.
  4. Beat in the flour, pumpkin pie spice, baking powder, 0.5 teaspoon cinnamon, and nuts (if using).
  5. Scoop the batter into the prepared loaf pans. Sprinkle the top of each loaf with half of the streusel topping.
  6. Bake in the preheated oven for 1 hour and 15 minutes, until the loaves have risen and the topping is browned.
  7. Let the banana bread cool in the pans for 5 minutes before turning out onto a wire rack to finish cooling.
