  • 1 Pound sweet potatoes, peeled
  • 0.25 Cups butter, melted
  • 1 14 Ounces (oz) can sweetened condensed milk
  • 1 Teaspoon (tsp) cinnamon, ground
  • 1 Teaspoon (tsp) orange zest, zested
  • 1 Teaspoon (tsp) vanilla extract
  • 0.5 Teaspoon (tsp) nutmeg, ground
  • 0.25 Teaspoon (tsp) salt
  • 1 Whole egg
  • 1 Recipe pastry for a 9-inch single crust pie
  • 1 Whole egg
  • 2 Tablespoons (tbsp) dark corn syrup
  • 2 Tablespoons (tbsp) brown sugar, packed
  • 1 Tablespoon (tbsp) butter, melted
  • 0.5 Teaspoon (tsp) maple flavored extract
  • 1 Cup pecans, chopped

Steps

  1. Boil the sweet potatoes whole in their skins for 40 to 50 minutes until tender. Run cold water over them and remove the skins. Break apart the sweet potatoes in a large bowl.
  2. Melt 0.25 cups of butter and pour it into the bowl with the sweet potatoes. Beat with an electric mixer until smooth. Blend in the sweetened condensed milk, cinnamon, orange zest, vanilla, nutmeg, salt, and 1 egg. Pour the mixture into the unbaked pie crust.
  3. Preheat the oven to 425°F (220°C). Bake the pie for 20 minutes. Remove from the oven and reduce the temperature to 350°F (175°C).
  4. While the pie is baking, prepare the topping. Mix together 1 egg, corn syrup, brown sugar, 1 tablespoon melted butter, maple flavoring, and pecans. Mix thoroughly and sprinkle over the pie.
  5. Bake for another 25 minutes until the pie is set. Let it cool before serving. Enjoy with a scoop of ice cream or a dollop of whipped cream.
