Ingredients
- 4 Cups glutinous white rice
- 6 Cups cold water
- 1 14 Ounces (oz) can coconut milk, divided
- 1 1/3 Cups white sugar
- 1 1/3 Cups brown sugar
- 3 Tablespoons (tbsp) coconut preserves
Steps
- Soak the glutinous rice overnight in 6 cups of cold water.
- Preheat your oven to 350 degrees F (175 degrees C) and grease a 9x13 inch baking pan.
- In a saucepan, cook the soaked rice over medium heat with the soaking water, 1/2 can of coconut milk, and white sugar. Stir constantly until the mixture is tender and thickened, about 20 minutes. Pour the mixture into the prepared baking pan.
- In a small saucepan, combine the brown sugar, remaining 1/2 can of coconut milk, and coconut preserves. Bring the mixture to a boil.
- Carefully pour the boiling mixture over the rice in the baking pan.
- Bake in the preheated oven until the topping thickens, about 25 minutes.
- Allow the Biko to cool completely before cutting it into squares to serve.
