Ingredients

  • 4 Cups glutinous white rice
  • 6 Cups cold water
  • 1 14 Ounces (oz) can coconut milk, divided
  • 1 1/3 Cups white sugar
  • 1 1/3 Cups brown sugar
  • 3 Tablespoons (tbsp) coconut preserves

Steps

  1. Soak the glutinous rice overnight in 6 cups of cold water.
  2. Preheat your oven to 350 degrees F (175 degrees C) and grease a 9x13 inch baking pan.
  3. In a saucepan, cook the soaked rice over medium heat with the soaking water, 1/2 can of coconut milk, and white sugar. Stir constantly until the mixture is tender and thickened, about 20 minutes. Pour the mixture into the prepared baking pan.
  4. In a small saucepan, combine the brown sugar, remaining 1/2 can of coconut milk, and coconut preserves. Bring the mixture to a boil.
  5. Carefully pour the boiling mixture over the rice in the baking pan.
  6. Bake in the preheated oven until the topping thickens, about 25 minutes.
  7. Allow the Biko to cool completely before cutting it into squares to serve.
