  • 1.5 Cups white rice flour
  • 0.75 Cups millet flour
  • 0.5 Cups unsweetened cocoa powder
  • 1 Teaspoon salt
  • 1 Teaspoon baking soda
  • 1 Tablespoon baking powder
  • 1 Teaspoon xanthan gum
  • 4 Whole eggs
  • 1.25 Cups white sugar
  • 0.67 Cups sour cream
  • 1 Cup milk
  • 2 Teaspoons vanilla extract

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C). Prepare two 12-cup muffin pans by greasing them or lining them with paper baking cups.
  2. In a medium bowl, mix together the rice flour, millet flour, cocoa powder, salt, baking soda, baking powder, and xanthan gum.
  3. In a separate large bowl, beat the eggs, sugar, sour cream, milk, and vanilla extract until well combined.
  4. Gradually stir the dry ingredients into the wet mixture until the batter is smooth.
  5. Evenly spoon the batter into the prepared muffin cups.
  6. Bake in the preheated oven for 20 to 25 minutes, or until the tops of the cupcakes spring back when lightly pressed.
