Ingredients

  • 3 ½ Cups all-purpose flour, sifted
  • 2 Teaspoons baking powder
  • 1 Teaspoon salt
  • ¾ Cup brown sugar, packed
  • ¾ Cup white sugar
  • ⅔ Cup butter, softened
  • 2 Large eggs
  • ⅓ Cup milk
  • 1 Teaspoon vanilla
  • 1 ¾ Cups raisins
  • 1 Cup brown sugar, packed
  • 1 Cup water
  • 1 Pinch salt, to taste
  • 1 Teaspoon lemon juice
  • 1 ½ Tablespoons cornstarch
  • 2 Tablespoons water
  • ½ Cup walnuts, minced

Steps

  1. Prepare the Dough: Sift together the flour, baking powder, and salt. Set aside.
  2. In a large bowl, beat the brown sugar, white sugar, and softened butter with an electric mixer until light and fluffy. Add the eggs, milk, and vanilla, beating at high speed for 2 minutes. Gradually blend in the flour mixture at a lower speed. Cover and refrigerate the dough for at least 3 hours.
  3. Make the Filling: In a saucepan, combine the raisins, 1 cup of brown sugar, 1 cup of water, pinch of salt, and lemon juice. Bring to a boil and simmer for 3 minutes.
  4. Mix the cornstarch with 2 tablespoons of water until smooth, then add to the raisin mixture. Continue to simmer until thickened. Remove from heat and let cool. Stir in the minced walnuts once cooled.
  5. Preheat the oven to 350°F (175°C). Lightly grease baking sheets.
  6. Roll out the chilled dough to 1/8 inch thick on a floured surface. Cut into 3/4 inch rounds. Place rounds on the prepared baking sheet. Add a heaping teaspoon of raisin filling on each cookie round and top with another round, crimping the edges to seal.
  7. Bake in the preheated oven for 8 minutes. Allow cookies to cool on the sheet until just barely warm.
