Ingredients
- 3 ½ Cups all-purpose flour, sifted
- 2 Teaspoons baking powder
- 1 Teaspoon salt
- ¾ Cup brown sugar, packed
- ¾ Cup white sugar
- ⅔ Cup butter, softened
- 2 Large eggs
- ⅓ Cup milk
- 1 Teaspoon vanilla
- 1 ¾ Cups raisins
- 1 Cup brown sugar, packed
- 1 Cup water
- 1 Pinch salt, to taste
- 1 Teaspoon lemon juice
- 1 ½ Tablespoons cornstarch
- 2 Tablespoons water
- ½ Cup walnuts, minced
Steps
- Prepare the Dough: Sift together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the brown sugar, white sugar, and softened butter with an electric mixer until light and fluffy. Add the eggs, milk, and vanilla, beating at high speed for 2 minutes. Gradually blend in the flour mixture at a lower speed. Cover and refrigerate the dough for at least 3 hours.
- Make the Filling: In a saucepan, combine the raisins, 1 cup of brown sugar, 1 cup of water, pinch of salt, and lemon juice. Bring to a boil and simmer for 3 minutes.
- Mix the cornstarch with 2 tablespoons of water until smooth, then add to the raisin mixture. Continue to simmer until thickened. Remove from heat and let cool. Stir in the minced walnuts once cooled.
- Preheat the oven to 350°F (175°C). Lightly grease baking sheets.
- Roll out the chilled dough to 1/8 inch thick on a floured surface. Cut into 3/4 inch rounds. Place rounds on the prepared baking sheet. Add a heaping teaspoon of raisin filling on each cookie round and top with another round, crimping the edges to seal.
- Bake in the preheated oven for 8 minutes. Allow cookies to cool on the sheet until just barely warm.
