Steps

  4. Gradually mix in the sifted flour until a dough forms. Cover the dough with plastic wrap and refrigerate for 30 to 60 minutes to allow it to rest and develop flavor.
  5. Roll out the dough, working with a small portion at a time (about the size of a baseball), to a thickness of 1/8 inch. Cut the dough into strips 2 to 3 inches wide, then cut diagonally to form diamond shapes.
  6. Heat the vegetable oil in a deep, wide, heavy-bottomed skillet over medium-high heat until it reaches 360°F (180°C).
  7. Carefully lower the dough diamonds into the hot oil in batches. Fry until they are puffed and golden brown, about 3 to 5 minutes. Use a slotted spoon to transfer them to a rack set over paper towels to drain and cool slightly.
  8. Place the warm beignets in a clean paper bag with sifted confectioners' sugar and shake gently until they are generously coated. Alternatively, use a sifter to dust the beignets with confectioners' sugar.
