Ingredients

Pie Crust

  • 1 Recipe pastry for a 9-inch single crust pie

Bottom Layer

  • 0.5 Cups white sugar
  • 2 Tablespoons all-purpose flour
  • 0.5 Cups molasses
  • 1 Large egg
  • 1 Cups water
  • 3 Tablespoons fresh lemon juice
  • 1 Tablespoon lemon zest, zested

Top Layer

  • 0.67 Cups white sugar
  • 0.25 Cups butter, softened
  • 1 Large egg, whisked
  • 1.25 Cups all-purpose flour
  • 0.5 Teaspoons baking soda
  • 0.5 Cups buttermilk

Steps

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. In a bowl, combine 0.5 cup sugar with 2 tablespoons flour and mix well. Stir in molasses, egg, 1 cup water, lemon juice, and lemon zest. Mix thoroughly and pour into the unbaked pie shell.
  3. In another bowl, cream butter with the remaining 0.67 cup white sugar until light and fluffy. Add the whisked egg. Sift 1.25 cups flour and baking soda together, then add to the creamed mixture with buttermilk. Spread this mixture over the top of the bottom layer in the pie shell.
  4. Bake in the preheated oven until the filling is set, about 35 to 40 minutes.
  5. Allow the pie to cool before serving. Enjoy your Montgomery Pie!
