Ingredients

  • 0.75 Cups butter
  • 2 Cups white sugar
  • 4 Large eggs, whisked
  • 15 Ounces (oz) pumpkin puree
  • 2 Cups all-purpose flour
  • 2 Teaspoons (tsp) baking powder
  • 0.5 Teaspoons (tsp) baking soda
  • 0.5 Teaspoons (tsp) salt
  • 1 Teaspoon (tsp) cinnamon, ground
  • 0.25 Teaspoon (tsp) nutmeg, ground
  • 1 Cup walnuts, chopped
  • 3 Ounces (oz) cream cheese, softened
  • 0.33 Cups butter, softened
  • 1 Teaspoon (tsp) vanilla extract
  • 3 Cups confectioners' sugar, sifted

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C). Butter and flour a 10x15 inch jellyroll pan.
  2. In a large bowl, cream together 0.75 cups of butter and white sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the pumpkin puree.
  4. In a separate bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Stir this mixture into the pumpkin mixture.
  5. Mix in the chopped walnuts. Spread the batter evenly into the prepared pan.
  6. Bake for 30 to 35 minutes in the preheated oven, or until a toothpick inserted near the center comes out clean.
  7. Allow the bars to cool completely before frosting.
  8. For the frosting, in a medium bowl, mix together the cream cheese, 0.33 cups of butter, and vanilla extract until smooth.
  9. Gradually blend in the confectioners' sugar, then beat until smooth.
  10. Spread the frosting over the cooled pumpkin bars and cut into squares. Enjoy!
