  • 1 Cup cubed fresh peach, divided (about 1 very large, or 2 small peaches)
  • 2 Tablespoons (tbsp) white sugar
  • 0.125 Teaspoon (tsp) vanilla extract
  • 1 Pinch nutmeg, ground
  • 1 Pinch cinnamon, ground
  • 1 Tablespoon (tbsp) panko breadcrumbs
  • 0.5 Cup self-rising flour

Bourbon Simple Syrup (Optional)

  • 0.25 Cup white sugar
  • 2 Tablespoons (tbsp) water
  • 1 Tablespoon (tbsp) Bourbon whiskey

Steps

  1. Add the cubed peaches to a bowl and toss well with 2 tablespoons of sugar. Cover and let sit at room temperature for 30 minutes to release juices and form a syrup.
  2. Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  3. Stir in the vanilla extract, nutmeg, cinnamon, and panko breadcrumbs into the peaches. Add self-rising flour and stir until the batter is fully moistened, about 1 minute. Let the batter rest for 3 to 5 minutes before frying.
  4. Drop 6 heaping spoonfuls of batter into the hot oil and fry for 90 seconds. Carefully flip the fritters and fry for another 90 seconds. Flip again and cook for 1 more minute.
  5. Remove fritters and cool on a rack until just barely warm.
  6. To make the Bourbon syrup, combine 0.25 cups sugar, water, and Bourbon in a small saucepan. Bring to a boil over medium heat, stirring occasionally. Boil for 1 minute, then remove from heat and cool to room temperature.
  7. Serve fritters with vanilla ice cream and Bourbon syrup. Enjoy!
