- 2 Whole eggs

- 2 Teaspoons (tsp) white sugar
- 4 Cups all-purpose flour
- 1 Cup milk
- 1 Tablespoon (tbsp) cornstarch
- 2 Whole eggs
- 2 Tablespoons (tbsp) white sugar
- 1 Teaspoon (tsp) vanilla extract
- 1 Whole egg, whisked
- 0.75 Cup confectioners' sugar
- 1 Tablespoon (tbsp) hot water
- 2 Tablespoons (tbsp) cocoa powder
Steps
- Dissolve the yeast in warm milk in a small bowl and let it stand until foamy. In a separate bowl, whisk together melted butter, 2 eggs, salt, 2 teaspoons of sugar, and the yeast mixture until the sugar dissolves. Stir in flour to form a smooth dough. Cover and let rise in a warm place until doubled, about 30 minutes.
- For the filling, whisk 1 cup of milk with cornstarch in a saucepan. Cook over medium heat until hot and steaming. In a bowl, whisk 2 eggs with 2 tablespoons of sugar until well beaten. Gradually whisk in half of the hot milk mixture, then combine with the remaining milk in the saucepan. Cook until thickened and bubbling. Remove from heat and stir in vanilla extract. Cool the filling.
- Preheat the oven to 425 degrees F (220 degrees C) and line two baking sheets with parchment paper.
- Punch down the dough and divide it into two pieces. Roll each into a 12x12 inch square and cut into 9 pieces. Place 1 tablespoon of filling in the center of each piece, fold corners over the filling, and seal to form a packet.
- Place buns, seam side down, on baking sheets. Brush with whisked egg and bake for 15 minutes until golden brown. Let cool.
- Mix confectioners' sugar, hot water, and cocoa powder to make icing. Spread over each bun. Refrigerate leftovers.
