  • 0.33 Cups (cups) butter
  • 1 Cup (cup) all-purpose flour
  • 2 Tablespoons (tbsp) white sugar
  • 2 Large eggs, whisked
  • 0.5 Cups (cups) brown sugar, packed
  • 0.75 Cups (cups) flaked coconut
  • 0.5 Cups (cups) walnuts, chopped
  • 0.25 Teaspoons (tsp) salt
  • 0.25 Teaspoons (tsp) baking powder
  • 0.5 Teaspoons (tsp) vanilla extract
  • 2 Teaspoons (tsp) lemon zest, zested
  • 2 Tablespoons (tbsp) lemon juice
  • 1 Cup (cup) confectioners' sugar, sifted

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix 2 tablespoons of white sugar with 1 cup of all-purpose flour. Cut in 0.33 cups of butter until the mixture resembles coarse crumbs. Press this mixture firmly into the bottom of a 9x9 inch baking pan. Bake for 10 to 15 minutes in the preheated oven, then set aside to cool.
  3. In the same bowl, combine the brown sugar, salt, and baking powder. Add the whisked eggs and vanilla extract, mixing well. Stir in the flaked coconut and chopped walnuts until evenly coated. Spread this mixture over the baked crust. Return to the oven and bake for an additional 25 to 30 minutes.
  4. For the icing, mix the lemon zest, lemon juice, and sifted confectioners' sugar until smooth. Pour and spread the icing over the bars as soon as they come out of the oven. Allow to cool for 15 minutes before cutting into bars.
