Ingredients

  • 1 Pint fresh blueberries, drained
  • 3 Whole eggs
  • 1 Egg yolk
  • 1 Cup white sugar
  • 1 Cup milk
  • 1 Teaspoon (tsp) vanilla extract
  • 0.75 Cup all-purpose flour, sifted
  • 1 Pinch salt
  • 1 Tablespoon (tbsp) confectioners' sugar

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C). Lightly grease an 8x8-inch baking dish.
  2. Spread the drained blueberries evenly over the bottom of the prepared baking dish.
  3. In a mixing bowl, whisk together the eggs and egg yolk until they are light and fluffy.
  4. Gradually add the white sugar to the egg mixture, continuing to whisk until the mixture thickens.
  5. Whisk in the milk, followed by the vanilla extract, sifted flour, and a pinch of salt, ensuring each ingredient is fully incorporated before adding the next.
  6. Pour the batter over the blueberries in the baking dish, ensuring they are evenly covered.
  7. Place the dish on the center rack of the preheated oven and bake for about 45 minutes, or until the top is golden and springs back when touched.
