Ingredients

  • 0.25 Cup cold butter, divided
  • 0.5 Cup all-purpose flour
  • 0.25 Cup brown sugar, packed
  • 1 Teaspoon cinnamon, ground
  • 0.5 Cup quick cooking oats
  • 1.25 Cup white sugar
  • 0.5 Cup butter, softened
  • 2 Whole eggs
  • 3 Whole ripe bananas, mashed
  • 0.5 Cup buttermilk
  • 1 Teaspoon vanilla extract
  • 2.5 Cups all-purpose flour
  • 2 Teaspoons pumpkin pie spice
  • 2 Teaspoons baking powder
  • 0.5 Teaspoon cinnamon, ground
  • 1 Cup nuts, chopped (optional)

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease two 8 1/2 x 4 1/2 inch loaf pans.
  2. To make the streusel topping, mix 0.25 cups of cold butter, 0.5 cups flour, 0.25 cups brown sugar, 1 teaspoon cinnamon, and 0.5 cups oats in a bowl until crumbly. Set aside.
  3. In a separate bowl, cream together 1.25 cups white sugar and 0.5 cups softened butter. Stir in the eggs.
  4. Add the mashed bananas, buttermilk, and vanilla extract to the sugar mixture, stirring until well blended.
  5. Gradually beat in 2.5 cups flour, pumpkin pie spice, baking powder, 0.5 teaspoons cinnamon, and nuts (if using).
  6. Divide the batter evenly between the prepared loaf pans. Sprinkle the top of each loaf with half of the streusel topping.
  7. Bake in the preheated oven for 1 hour and 15 minutes, or until the loaves have risen and the topping is browned.
  8. Allow the banana bread to cool in the pans for 5 minutes before turning out onto a wire rack to finish cooling.
