Ingredients

  • 0.5 Cups (cup) water
  • 1 Tablespoon (tbsp) yeast
  • 0.5 Cups (cup) white sugar
  • 0.25 Cups (cup) shortening
  • 1 Teaspoon (tsp) salt
  • 1 Cups (cup) boiling water
  • 1 Cups (cup) evaporated milk
  • 2 Large eggs, whisked
  • 7.5 Cups (cup) all-purpose flour
  • 1 Quart (qt) vegetable oil
  • 1 Cup (cup) confectioners' sugar

Steps

  1. In a small bowl, pour 0.5 cups of water and sprinkle the yeast over it. Let it stand for about 5 minutes until dissolved.
  2. In a large bowl, combine the white sugar, shortening, and salt. Pour 1 cup of boiling water over the mixture, stirring until the shortening melts. Add the evaporated milk and allow the mixture to cool to lukewarm.
  3. Stir in the yeast mixture and whisked eggs into the cooled mixture.
  4. Gradually mix in the flour until a smooth dough forms. Cover the dough with plastic wrap and refrigerate for 30 to 60 minutes to allow it to rest and develop flavor.
  5. Roll out the dough on a floured surface, working with a small portion at a time, until it is 1/8-inch thick. Cut the dough into strips 2- to 3-inches wide, then cut at an angle to form diamond shapes.
  6. Heat the vegetable oil in a deep, wide, heavy-bottomed skillet over medium-high heat until it reaches 360 degrees F (180 degrees C).
  7. Carefully lower the dough diamonds into the hot oil in batches. Fry until they are puffed and golden brown, about 3 to 5 minutes. Use a slotted spoon to transfer them to a rack set over paper towels to drain and cool slightly.
  8. Place the warm beignets in a clean paper bag with confectioners' sugar and shake gently until they are generously coated. Alternatively, use a sifter to dust the beignets with confectioners' sugar.
  9. Serve immediately for the best texture and flavor. Enjoy your homemade New Orleans beignets with a cup of coffee or hot chocolate for an authentic experience.
