Ingredients

  • 2 Cups all-purpose flour
  • 0.33 Cups white sugar
  • 1 Tablespoon (tbsp) baking powder
  • 1 Teaspoon (tsp) salt
  • 0.5 Teaspoon (tsp) cinnamon, ground
  • 0.5 Cups unsalted butter, cold
  • 0.5 Cups heavy whipping cream
  • 2 Whole eggs
  • 0.5 Cups diced peaches, packaged
  • 0.25 Cups pecans, chopped

Topping

  • 1 Whole egg
  • 2 Tablespoons (tbsp) water
  • 1 Pinch raw sugar, to taste

Steps

  1. Preheat your oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  2. In a bowl, mix together the flour, white sugar, baking powder, salt, and cinnamon. Cut in the cold butter until the mixture resembles pea-sized pieces.
  3. In a small bowl, whisk together the heavy cream and 2 eggs. Add this mixture to the flour-butter mixture. Gently fold in the diced peaches and chopped pecans until just combined.
  4. Turn the dough out onto a floured surface and pat it into a round disc about 1/2-inch thick. Cut the disc into 8 wedges and transfer them to the prepared baking sheet.
  5. In another small bowl, whisk together 1 egg and water. Brush this mixture over the scone wedges and sprinkle with raw sugar.
  6. Bake in the preheated oven for 20 to 25 minutes, or until the scones are golden brown. Enjoy warm or at room temperature.
