Ingredients

  • 1 6 Ounces (oz) package apricot flavored Jell-O® mix
  • 0.67 Cups white sugar
  • 0.67 Cups water
  • 2 4 Ounces (oz) jars apricot baby food, packaged
  • 1 20 Ounces (oz) can crushed pineapple with juice, packaged
  • 1 8 Ounces (oz) package cream cheese, softened
  • 1 14 Ounces (oz) can sweetened condensed milk, packaged
  • 0.33 Cups pecans, chopped
  • 1 8 Ounces (oz) container frozen whipped topping, thawed

Steps

  1. In a small saucepan, combine the apricot Jell-O® mix, sugar, and water. Bring to a boil and stir until the mixture is dissolved. Remove from heat.
  2. Add the apricot baby food and crushed pineapple with juice to the gelatin mixture. Stir well and set aside to cool for 10 minutes.
  3. In a separate bowl, mix the softened cream cheese and sweetened condensed milk until smooth.
  4. Pour the cream cheese mixture into the cooled fruit mixture and whisk together until well combined.
  5. Stir in the chopped pecans and pour the mixture into a 9x13 inch pan.
  6. Refrigerate the salad until it is fully chilled and set.
  7. Once chilled, top with the thawed whipped topping if desired. Sprinkle additional pecans on top for decoration.
  8. Cut into squares and serve. Enjoy your festive apricot pineapple delight!
