Ingredients
- 1 6 Ounces (oz) package apricot flavored Jell-O® mix
- 0.67 Cups white sugar
- 0.67 Cups water
- 2 4 Ounces (oz) jars apricot baby food, packaged
- 1 20 Ounces (oz) can crushed pineapple with juice, packaged
- 1 8 Ounces (oz) package cream cheese, softened
- 1 14 Ounces (oz) can sweetened condensed milk, packaged
- 0.33 Cups pecans, chopped
- 1 8 Ounces (oz) container frozen whipped topping, thawed
Steps
- In a small saucepan, combine the apricot Jell-O® mix, sugar, and water. Bring to a boil and stir until the mixture is dissolved. Remove from heat.
- Add the apricot baby food and crushed pineapple with juice to the gelatin mixture. Stir well and set aside to cool for 10 minutes.
- In a separate bowl, mix the softened cream cheese and sweetened condensed milk until smooth.
- Pour the cream cheese mixture into the cooled fruit mixture and whisk together until well combined.
- Stir in the chopped pecans and pour the mixture into a 9x13 inch pan.
- Refrigerate the salad until it is fully chilled and set.
- Once chilled, top with the thawed whipped topping if desired. Sprinkle additional pecans on top for decoration.
