  • 24 Large marshmallows
  • 1.5 Cups all-purpose flour, sifted
  • 0.75 Teaspoons (tsp) salt
  • 0.5 Teaspoon (tsp) baking soda
  • 1 Teaspoon (tsp) baking powder
  • 0.5 Cups margarine, softened
  • 1.5 Cups white sugar
  • 2 Whole eggs
  • 1 Teaspoon (tsp) vanilla extract
  • 0.5 Cup buttermilk
  • 1 Cup nuts, chopped (optional)
  • 1 Cup banana, mashed

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Arrange the marshmallows in a single, even layer at the bottom of the pan.
  2. In a bowl, sift together the flour, salt, baking soda, and baking powder. Set aside.
  3. In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually stir in the sifted flour mixture alternately with the buttermilk, mixing just until incorporated. Fold in the nuts and mashed bananas.
  5. Pour the batter over the marshmallows, ensuring they are completely covered and the batter reaches all sides of the pan.
