Ingredients
- 0.33 Cups (c) white sugar
- 0.33 Cups (c) water
- 1 Cups (c) raisins
- 1.5 Teaspoons (tsp) butter, melted
- 1 Pinch salt, to taste
- 2.25 Cups (c) all-purpose flour, sifted
- 0.25 Teaspoons (tsp) cinnamon, ground
- 0.25 Teaspoons (tsp) allspice, ground
- 0.25 Teaspoons (tsp) cloves, ground
- 0.25 Teaspoons (tsp) salt
- 2 Teaspoons (tsp) baking powder
- 0.5 Cups (c) shortening
- 1 Cups (c) white sugar
- 2 Large eggs
- 0.5 Teaspoons (tsp) vanilla extract
- 1 Tablespoons (tbsp) milk
Steps
- In a small saucepan over medium heat, combine 0.33 cups of sugar, water, raisins, melted butter, and a pinch of salt. Bring to a boil and cook until the mixture thickens and you can see the bottom of the pan while stirring. Remove from heat and let it cool completely.
- Preheat your oven to 375°F (190°C).
- In a large bowl, sift together the all-purpose flour, ground cinnamon, ground allspice, ground cloves, salt, and baking powder. Set aside.
- In a separate medium bowl, cream the shortening and 1 cup of sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the creamed mixture, mixing until just blended. Stir in the milk to form a soft dough.
- On a lightly floured surface, roll out the dough to a thickness of 1/4 to 1/8 inch. Cut into 2 1/2 inch circles.
- Place a teaspoon of the cooled raisin filling onto the center of half of the circles. Cover with the remaining circles and press the edges together with the tines of a fork to seal.
- Arrange the cookies on ungreased baking sheets. Optionally, sprinkle the tops with a little sugar for added sweetness and texture.
- Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
