Ingredients

  • Brownies:
  • 1 Cup butter, melted
  • 2 Cups white sugar
  • 0.67 Cup cocoa powder
  • 4 Large eggs
  • 2 Teaspoons (tsp) vanilla extract
  • 1 Cup gluten-free all-purpose baking flour
  • 0.5 Teaspoon (tsp) gluten-free baking powder
  • 0.25 Teaspoon (tsp) salt
  • Cheesecake Mix:
  • 8 Ounces (oz) cream cheese, packaged
  • 0.33 Cup white sugar
  • 1 Large egg
  • 21 Ounces (oz) cherry pie filling, drained

Steps

  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking pan.
  2. Melt the butter in the microwave for about 1 minute. Stir in the sugar and cocoa powder. Blend in the eggs, one at a time, using an electric mixer; add the vanilla extract.
  3. In a small bowl, combine the flour, baking powder, and salt. Add to the batter and mix until well combined. Pour into the prepared baking pan and level with a knife or spatula.
  4. In a second bowl, beat together the cream cheese, sugar, and egg until smooth. Dollop the cream cheese mixture on top of the brownie batter.
  5. Separate the cherries from the jelled filling and dollop them over the cream cheese mixture. Swirl together using a knife.
  6. Bake in the preheated oven until the brownies are set and the edges pull away from the sides of the pan, about 35 to 45 minutes.
  7. Remove from the oven and cool thoroughly before cutting into bars.
