Ingredients

  • 8 Large Golden Delicious apples, peeled
  • 1 Tablespoon (tbsp) fresh lemon juice
  • 0.75 Cups white sugar
  • 3 Tablespoons (tbsp) potato starch
  • 1 Teaspoon (tsp) cinnamon, ground
  • 0.25 Teaspoon (tsp) nutmeg, grated
  • 0.25 Cups unsalted butter
  • 1 Recipe pastry for a 10-inch double crust pie
  • 2 Teaspoons (tsp) milk
  • 1 Tablespoon (tbsp) white sugar

Steps

  1. Preheat your oven to 425°F (220°C). Position an oven rack in the lower part of the oven and place a baking stone on it for even heat distribution.
  2. In a large bowl, toss the apple slices with lemon juice to prevent browning and enhance flavor. Set aside.
  3. In a separate bowl, mix together 0.75 cups of sugar, potato starch, cinnamon, and nutmeg. This will be your spice mixture.
  4. Divide the pastry dough in half. Roll out one half on a lightly floured surface to fit a 10-inch pie plate. Place the bottom crust in the pie plate.
  5. Layer half of the apple slices into the crust, dot with half of the butter pieces, and sprinkle with half of the spice mixture. Repeat with the remaining apples, butter, and spice mixture.
  6. Roll out the remaining dough half and carefully place it over the apples. Pinch and crimp the edges to seal the crusts. Poke a few holes in the top crust with a fork to allow steam to escape.
  7. Brush the top crust with milk and sprinkle with the remaining tablespoon of sugar for a golden, sweet finish.
  8. Place the pie on the baking stone in the preheated oven. Immediately reduce the oven temperature to 350°F (175°C). Bake for about 1 hour, checking halfway through. Cover the edges with aluminum foil if they begin to over-brown.
  9. Once baked, cool the pie on a wire rack for at least 3 hours before serving to allow the filling to set properly.
