Ingredients

  • 1 Cup white sugar
  • 1 Cup butter, softened
  • 2 Whole eggs
  • 1 Teaspoon (tsp) vanilla extract
  • 3.75 Cups all-purpose flour, sifted
  • 2 Teaspoons (tsp) baking powder, sifted
  • 0.25 Cup heavy cream
  • 1 Pinch salt, to taste

Icing

  • 0.5 Cup confectioners' sugar
  • 1 Teaspoon (tsp) lemon juice
  • Assorted food coloring

Steps

  1. Beat the white sugar and softened butter together in a bowl using an electric mixer until smooth and creamy. Add the eggs and vanilla extract, and beat until well mixed.
  2. Sift together the flour, baking powder, and salt. Stir into the creamed butter mixture alternately with the heavy cream until the dough is evenly mixed. Chill the dough in the refrigerator for 2 to 3 hours.
  3. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  4. Roll the cookie dough on a floured work surface. Cut the dough into strips about 2.5 inches long and as thick as a pencil, forming one end into a point. Arrange the "pencils" on the prepared baking sheet.
  5. Bake in the preheated oven until lightly browned, about 12 to 14 minutes. Transfer the parchment paper with cookies to a wire rack to cool completely.
  6. Mix enough confectioners' sugar and lemon juice together in a bowl to form a thick icing. Divide the icing among several small bowls and mix different colors of food coloring into each bowl.
  7. Decorate the "pencil" cookies with colored icing so they look like colored pencils. Allow the icing to dry completely.

Enjoy your creative and delicious Back-to-School Cookies!
