Ingredients

Oatmeal Cookies:

  • 2 Cups packed brown sugar
  • 0.75 Cups unsalted butter, melted
  • 2 Large eggs, beaten
  • 2.5 Cups all-purpose flour
  • 1 Teaspoon cinnamon, ground
  • 1 Teaspoon baking powder
  • 1 Teaspoon baking soda
  • 0.5 Teaspoon salt
  • 3 Tablespoons boiling water
  • 2 Cups quick cooking oats

Filling:

  • 2 Cups confectioners' sugar
  • 1 Large egg white, whisked
  • 2 Tablespoons milk
  • 1 Teaspoon vanilla extract
  • 0.75 Cups shortening

Steps

  1. Preheat the oven to 350°F (175°C). Lightly grease 2 baking sheets.
  2. Make the cookies: In a large bowl, beat the brown sugar and melted butter with an electric mixer until light and fluffy. Add the beaten eggs and mix well.
  3. In a separate bowl, mix together the flour, ground cinnamon, baking powder, baking soda, and salt. Add the flour mixture to the wet ingredients in two batches, alternating with the boiling water. Mix the batter after each addition until well combined. Stir in the oats.
  4. Drop spoonfuls of dough 2 inches apart onto the prepared baking sheets.
  5. Bake in the preheated oven for 10 to 12 minutes, switching racks halfway through. Remove from the oven and transfer to wire racks to cool.
  6. Make the filling: While the cookies are cooling, beat 1 cup of confectioners' sugar, whisked egg white, milk, and vanilla extract until combined. Beat in the shortening and the remaining 1 cup of confectioners' sugar until light and creamy.
  7. Spread the filling onto half of the cooled cookies, then sandwich with the remaining cookies. Enjoy your oatmeal whoopie pies!
