Ingredients

  • 1 Cup pitted Deglet Noor dates, drained
  • 1 Cup hot water
  • 0.5 Cup unsalted butter, softened
  • 2 Large eggs
  • 2 Teaspoons vanilla extract
  • 0.33 Cup whole wheat flour
  • 0.33 Cup unsweetened cocoa powder
  • 0.5 Teaspoon baking soda
  • 0.25 Teaspoon salt
  • 0.5 Cup bittersweet chocolate chips

Steps

  1. Soak the dates in hot water in a small bowl for 10 to 15 minutes.
  2. Preheat the oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving enough paper to hang over the sides.
  3. Drain the dates and transfer them to a food processor. Pulse until completely smooth, about 1 to 2 minutes. If too thick, add hot water, 1 tablespoon at a time, until pureed.
  4. Add the softened butter to the food processor and pulse to combine, about 30 seconds.
  5. Add the eggs and vanilla extract; process until light and fluffy, about 1 minute.
  6. Add the whole wheat flour, cocoa powder, baking soda, and salt; pulse until just combined, about 30 seconds.
  7. Gently stir in the chocolate chips by hand. Pour the batter into the prepared baking dish.
  8. Bake in the preheated oven until the edges just begin to set, about 20 to 25 minutes.
  9. Cool in the dish for 10 minutes, then remove by gently lifting the parchment paper edges. Cool completely on a cooling rack.
  10. Cut into 16 pieces and enjoy!
