Ingredients

  • 1.25 Cups (cups) warm water
  • 1 Tablespoon (tbsp) active dry yeast
  • 2 Tablespoons (tbsp) white sugar
  • 4 Cups (cups) all-purpose flour, divided
  • 4 Large eggs, whisked
  • 0.25 Cups (cups) butter
  • 2.5 Teaspoons (tsp) salt
  • 0.5 Cups (cups) milk
  • 3 Cups (cups) raisins
  • 0.5 Cups (cups) vegetable oil

Steps

  1. In a large mixing bowl, dissolve the yeast in warm water. Stir in the sugar and 2 cups of the flour. Mix until smooth, cover with plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.
  2. Once the dough has risen, add the remaining 2 cups of flour, eggs, butter, salt, milk, and raisins. Mix until all ingredients are fully incorporated and the dough is smooth. Cover the bowl again and let it rise for another hour.
  3. Heat vegetable oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Ensure the oil is at the correct temperature to avoid undercooked centers.
  4. Using a tablespoon, drop spoonfuls of dough into the hot oil. Fry until golden brown on both sides, about 2-3 minutes per side. The dough balls should flip over naturally when one side is done.
  5. Remove the poertzelki from the oil and drain on paper towels. For an extra touch of sweetness, sprinkle with granulated or powdered sugar while still warm.
