Ingredients
- 1 Cup butter, softened
- 0.33 Cup heavy whipping cream
- 2 Cups all-purpose flour, sifted
- 0.33 Cup granulated sugar, for decoration
- 0.25 Cup butter, softened (for filling)
- 0.75 Cup confectioners' sugar, sifted
- 1 Whole egg yolk
- 1 Teaspoon (tsp) vanilla extract
- 2 Drops red food coloring
Steps
- Prepare the Dough: In a mixing bowl, combine 1 cup of softened butter, 0.33 cup of heavy whipping cream, and 2 cups of sifted all-purpose flour. Mix with an electric mixer until well combined. Chill the dough for at least 1 hour.
- Preheat Oven: Preheat your oven to 375°F (190°C). Prepare a sheet of waxed paper and sprinkle it with granulated sugar.
- Roll and Cut Wafers: On a floured surface, roll out 1/3 of the chilled dough to a thickness of 1/8 inch. Use a 1 1/2-inch round cookie cutter to cut out approximately 60 wafers. Press both sides of each wafer into the granulated sugar, then place them on ungreased baking sheets. Prick each wafer about 4 times with a fork.
- Bake Wafers: Bake the wafers in the preheated oven for 7 to 9 minutes. Allow them to cool completely.
- Prepare the Filling: While the wafers are cooling, blend 0.25 cup of softened butter, 0.75 cup of sifted confectioners' sugar, 1 whole egg yolk, and 1 teaspoon of vanilla extract using an electric mixer. Add 2 drops of red food coloring and mix until the filling is evenly tinted.
- Assemble the Cookies: Spread a small amount of filling onto one wafer and top with another wafer. Press gently to seal. Repeat with the remaining wafers and filling.
