Ingredients

  • 2 ¼ Cups cake flour, sifted
  • 1 ½ Cups white sugar
  • 3 ½ Teaspoons (tsp) baking powder
  • 1 Teaspoon (tsp) salt
  • ½ Cup unsalted butter, softened
  • 1 Cup whole milk
  • 1 ½ Teaspoons (tsp) pure vanilla extract
  • 4 Large egg whites
  • 1 Teaspoon (tsp) almond extract

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan or two 9-inch round pans.
  2. In a large mixing bowl, combine the cake flour, sugar, baking powder, and salt. Add the softened butter, milk, vanilla extract, and almond extract (if using). Beat on low speed until combined, then increase to high speed and beat for 2 minutes, scraping the bowl occasionally.
  3. In a separate clean, dry glass or metal bowl, beat the egg whites until stiff peaks form. Gently fold one-third of the egg whites into the batter to lighten it, then carefully fold in the remaining egg whites until no streaks remain.
  4. Pour the batter evenly into the prepared pan(s). For a 9x13 inch cake, bake for 35 to 40 minutes. For 9-inch rounds, bake for 30 to 35 minutes. The cake is done when a toothpick inserted into the center comes out clean.
  5. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before frosting with your choice of French Silk Frosting or a light buttercream.
