Ingredients

  • 2 Large eggs
  • 0.5 Teaspoons (tsp) vanilla extract
  • 0.5 Teaspoons (tsp) lemon zest, zested
  • 1 Cup confectioners' sugar, sifted
  • 0.75 Cups all-purpose flour, sifted
  • 0.25 Teaspoon (tsp) baking powder, sifted
  • 0.5 Cup butter, melted

Steps

  1. Preheat the oven to 375°F (190°C). Grease and flour 24 3-inch madeleine molds.
  2. In a medium bowl, beat the eggs, vanilla, and lemon zest with an electric mixer on high speed for 5 minutes. Gradually beat in the confectioners' sugar and continue beating for 5 to 7 minutes until the mixture is thick and satiny.
  3. Sift together the flour and baking powder. Sift 1/4 of the flour mixture over the egg mixture and gently fold in. Continue folding in the remaining flour by fourths. Then, fold in the melted butter. Spoon the batter into the prepared molds, filling them 3/4 full.
  4. Bake in the preheated oven for 10 to 12 minutes, until the edges are golden and the tops spring back when touched. Cool in the molds on a rack for 1 minute. Loosen the cookies with a knife, invert them onto a rack, and cool completely.
  5. Optionally, sift confectioners' sugar over the tops or melt semi-sweet chocolate chips and dip the tips in the chocolate. Store in an airtight container.
