Ingredients

  • 1 4 Pounds (lb) sugar pumpkin, peeled

Steps

  1. Preheat the oven to 300 degrees F (150 degrees C).
  2. Cut the pumpkin into small, manageable pieces. Remove and discard the pith and seeds.
  3. Place the pumpkin pieces, skin-side up, in a large roasting pan. Add 1/4 inch of water to the pan.
  4. Bake the pumpkin, uncovered, for about 1 hour or until tender.
  5. Remove the pan from the oven and let the pumpkin cool for 10 to 20 minutes.
  6. Once cooled, cut away the skin from the pumpkin pieces.
  7. Transfer the pumpkin flesh to a food processor and puree until smooth, or mash the pieces in a bowl with a potato masher.
