  • 3.5 Cups all-purpose flour
  • 2 Teaspoons baking powder
  • 6 Large eggs
  • 1.5 Cups white sugar
  • 0.75 Cups shortening, melted
  • 2 Tablespoons shortening, melted
  • 1 Tablespoon anise seeds, ground
  • 1 Teaspoon vanilla extract

Steps

  1. Preheat the pizzelle iron according to the manufacturer's instructions.
  2. In a bowl, mix together the flour and baking powder.
  3. In the bowl of a stand mixer fitted with a paddle attachment, combine the eggs and sugar. Beat on medium speed until well-blended.
  4. Add the 0.75 cup plus 2 tablespoons of melted shortening to the egg mixture and beat until blended.
  5. Gradually add the flour mixture to the wet ingredients, mixing on medium speed until fully incorporated.
  6. Fold in the crushed anise seeds and vanilla extract with a spatula.
  7. Drop a teaspoon of batter onto the preheated pizzelle iron.
  8. Bake for 30 to 40 seconds, or a few seconds longer for a darker pizzelle, until golden.

Cook's Notes:

  • For chocolate pizzelle, add 1/4 to 1/2 cup of unsweetened cocoa powder to the flour mixture in step 2.
  • To roll pizzelle for filling, do so immediately after they come off the hot iron.
