Ingredients

  • 4.5 Cups (cups) all-purpose flour, sifted
  • 1 Teaspoon (tsp) baking powder
  • 4 Large eggs
  • 1 Pound (lb) confectioners' sugar
  • 1 Tablespoon (tbsp) lemon zest, zested
  • 1 Tablespoon (tbsp) anise seed, ground
  • 1 Tablespoon (tbsp) anise seed, crushed

Steps

  1. In a large mixing bowl, sift together the all-purpose flour and baking powder. Set aside.
  2. In another large bowl, whip the eggs and confectioners' sugar using an electric mixer on high speed until the mixture is thick and pale, about 5-7 minutes.
  3. Gently fold in the lemon zest and ground anise seed into the egg mixture.
  4. Gradually add the sifted flour mixture to the wet ingredients, mixing until a smooth dough forms. Cover the dough with plastic wrap and chill in the refrigerator for about 1 hour to firm up.
  5. Once chilled, roll the dough out on a lightly floured surface to a 1/2 inch thickness. Use a springerle rolling pin to emboss the dough, or cut into desired shapes with cookie cutters.
  6. Place the cookies 1/2 inch apart on baking sheets lined with parchment paper. Sprinkle the tops with crushed anise seed.
  7. Allow the cookies to air dry uncovered overnight (approximately 12-24 hours) to set the embossed designs.
  8. Preheat your oven to 350 degrees F (175 degrees C).
  9. Lightly moisten the backs of the cookies by pressing them onto a damp cloth to ensure even rising.
  10. Bake the cookies in the preheated oven for 25 to 30 minutes, or until they are firm and lightly golden.
