Ingredients

  • 2 Cups (cups) white sugar
  • 1.75 Cups (cups) all-purpose flour
  • 0.75 Cups (cups) unsweetened cocoa powder
  • 1.5 Teaspoons (tsp) baking powder
  • 1.5 Teaspoons (tsp) baking soda
  • 1 Teaspoon (tsp) salt
  • 2 Large eggs
  • 1 Cup (cup) milk
  • 0.5 Cup (cup) vegetable oil
  • 2 Teaspoons (tsp) vanilla extract
  • 1 Cup (cup) boiling water
  • 1 Teaspoon (tsp) instant coffee granules

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans to prevent sticking.
  2. In a large mixing bowl, combine the sugar, flour, cocoa powder, baking powder, baking soda, and salt. Whisk together until evenly mixed.
  3. Create a well in the center of the dry ingredients. Add the eggs, milk, vegetable oil, and vanilla extract into the well. Using an electric mixer, beat the mixture on medium speed for 2 minutes until smooth and well combined.
  4. Dissolve the instant coffee granules in the boiling water, then stir it into the batter. The batter will be thin, but this is normal.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes. Then, carefully turn them out onto a wire rack to cool completely.
  8. Once cooled, frost with your favorite chocolate frosting or enjoy as is for a simple, yet indulgent treat.
