Ingredients
- 6 Whole egg whites
- 0.125 Teaspoon (tsp) cream of tartar
- 1 Cup white sugar
- 1 Tablespoon (tbsp) cornstarch
- 2 Teaspoons (tsp) distilled white vinegar
- 1.25 Cups heavy cream, chilled
- 1 Teaspoon (tsp) vanilla extract
- 2 Teaspoons (tsp) confectioners' sugar
- 4 Whole passion fruits, peeled
Steps
- Preheat the oven to 400°F (205°C). Grease the interior of an 8-inch springform pan and dust lightly with cornstarch.
- In a glass or ceramic bowl, beat the egg whites until stiff and glossy. Ensure no grease or yolk is present.
- Combine cream of tartar, white sugar, and cornstarch. Gradually beat into the egg whites. Sprinkle vinegar over the mixture and fold in gently.
- Pile the meringue into the prepared pan, spreading to the sides and leaving a slight depression in the center.
- Place in the preheated oven, close the door, and immediately reduce the temperature to 250°F (120°C). Bake for 75 to 90 minutes.
- Open the oven door and leave the meringue inside for an additional 15 minutes. Remove to a draft-free spot, carefully remove the springform pan rim, and allow to cool completely.
- Whip the cream, vanilla extract, and confectioners' sugar until thick and firm. Spread over the cooled meringue.
- Remove the pulp from the passion fruits and spoon over the cream. If using kiwi, peel and slice, then arrange the slices on top. Chill until serving.
