Ingredients
- 0.67 Cups butter, melted
- 1 Cup brown sugar, packed
- 0.25 Cups light corn syrup
- 0.25 Cups peanut butter, crunchy
- 1 Teaspoon vanilla extract
- 4 Cups quick cooking oats
- 2 Cups semisweet chocolate chips
- 2 Cups butterscotch chips
- 0.67 Cups peanut butter, crunchy
- 1 Cup peanuts, chopped
Steps
- Preheat the oven to 375°F (190°C). Grease a 9-inch baking pan.
- In a saucepan over medium heat, melt the butter, brown sugar, and corn syrup together. Stir in 0.25 cups of peanut butter and the vanilla extract. Mix well and stir in the oats. Press the mixture into the bottom of the prepared pan.
- Bake at 375°F (190°C) for 15 minutes.
- For the topping, melt the chocolate chips and butterscotch chips together in the top half of a double boiler. Stir in 0.67 cups of peanut butter and the chopped nuts until well blended.
- Spread the topping over the warm cooked bars. Sprinkle with additional chopped nuts if desired. Let the bars cool on a rack, then refrigerate. Cut into bars once chilled.
