Ingredients

  • 0.67 - 18 Ounces (oz) package refrigerated sugar cookie dough, packaged
  • 1 - 10 Ounces (oz) package cinnamon chips, packaged
  • 3 - 8 Ounces (oz) packages cream cheese, softened
  • 0.75 - Cups sugar
  • 1 - Teaspoon (tsp) pumpkin pie spice
  • 1 - Teaspoon (tsp) vanilla extract
  • 1 - Cup canned solid-pack pumpkin, packaged
  • 3 - Whole eggs

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Pat the sugar cookie dough into a 9x13 inch baking dish to cover the bottom. Sprinkle evenly with cinnamon chips.
  3. Bake in the preheated oven until the crust is lightly browned, about 12 to 14 minutes.
  4. While the crust is baking, beat together the cream cheese, sugar, pumpkin pie spice, and vanilla extract with an electric mixer until smooth.
  5. Add the canned pumpkin to the cream cheese mixture and beat until combined.
  6. Beat in the eggs one at a time until the mixture is smooth.
  7. Pour the cream cheese mixture over the baked crust in the baking dish.
  8. Return the dish to the oven and continue baking until the center of the cheesecake has set, about 30 to 35 minutes.
  9. Allow the baking dish to cool on a wire rack to room temperature.
  10. Refrigerate the cheesecake until cold, approximately 4 hours.
  11. Once chilled, cut into 18 squares and serve.
