  • 0.25 Teaspoon (tsp) cloves, ground
  • 1 Cup (cup) pumpkin puree, pureed
  • 0.5 Vanilla bean, divided
  • 1 Teaspoon (tsp) dark rum
  • 5 Large egg yolks
  • 2 Tablespoons (tbsp) sugar
  • 0.5 Cup (cup) toasted pecans, chopped
  • 0.25 Cup (cup) maple syrup

Steps

  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. In a saucepan over medium-low heat, combine the whipping cream, 0.25 cup sugar, cinnamon, ginger, nutmeg, cloves, pumpkin puree, and the vanilla bean pod and seeds. Bring to a simmer and stir in the rum. Remove from heat, cover, and let stand for 15 minutes.
  3. In a separate bowl, beat together the egg yolks and 2 tablespoons of sugar. Stir in 2 tablespoons of the cream mixture.
  4. Pour the egg yolk mixture into the saucepan with the cream mixture to create a custard. Stir and simmer for 3 to 5 minutes.
  5. Arrange 6 ramekins in a shallow baking dish. Evenly pour the custard into the ramekins. Fill the baking dish with boiling water until it reaches halfway up the sides of the ramekins. Loosely cover the dish with aluminum foil.
  6. Bake in the preheated oven until the custard is nearly set, with a dime-sized circle of jiggly liquid remaining in the center of each ramekin, about 25 to 40 minutes. Allow to sit, loosely covered with foil, for another 30 minutes.
  7. Cover each ramekin with plastic wrap and chill in the refrigerator overnight.
  8. Before serving, top each custard with chopped toasted pecans and a drizzle of maple syrup. Enjoy!
