  • 8 Ounces (oz) dried apricots
  • 0.5 Cup white sugar
  • 2 Tablespoons (tbsp) lemon juice
  • Water - Enough to cover
  • 1 Cup all-purpose flour, sifted
  • 1 Cup rolled oats
  • 1 Cup packed brown sugar
  • 0.5 Cup butter, melted

Steps

  1. Preheat your oven to 350 degrees F (180 degrees C).
  2. In a small saucepan, combine the apricots, lemon juice, and white sugar. Add enough water to just cover the apricots. Bring the mixture to a boil and cook until the apricots are soft. Once cooked, chop the apricots coarsely.
  3. In a separate bowl, sift together the flour, rolled oats, and brown sugar. Melt the butter over low heat and stir it into the flour mixture until well combined.
  4. Grease an 8 x 8 inch baking pan. Press 2/3 of the oat mixture into the bottom of the pan to form a crust.
  5. Spread the apricot mixture evenly over the crust.
  6. Sprinkle the remaining oat mixture over the apricot layer.
  7. Bake in the preheated oven for about 35 minutes, or until the top is golden brown.
