- 8 Ounces (oz) dried apricots
- 0.5 Cup white sugar
- 2 Tablespoons (tbsp) lemon juice
- Water - Enough to cover
- 1 Cup all-purpose flour, sifted
- 1 Cup rolled oats
- 1 Cup packed brown sugar
- 0.5 Cup butter, melted
Steps
- Preheat your oven to 350 degrees F (180 degrees C).
- In a small saucepan, combine the apricots, lemon juice, and white sugar. Add enough water to just cover the apricots. Bring the mixture to a boil and cook until the apricots are soft. Once cooked, chop the apricots coarsely.
- In a separate bowl, sift together the flour, rolled oats, and brown sugar. Melt the butter over low heat and stir it into the flour mixture until well combined.
- Grease an 8 x 8 inch baking pan. Press 2/3 of the oat mixture into the bottom of the pan to form a crust.
- Spread the apricot mixture evenly over the crust.
- Sprinkle the remaining oat mixture over the apricot layer.
- Bake in the preheated oven for about 35 minutes, or until the top is golden brown.
