Ingredients
- 1 14 Ounces (oz) can sweetened condensed milk
- 1 Cup cream
- 4.5 Cups white sugar
- 0.5 Cup unsalted butter, chopped
- 1 Pinch salt, to taste
- 1 Teaspoon (tsp) vanilla extract (optional)
Steps
- Generously butter a 13x18-inch sheet pan or two 8x8-inch square pans, and set aside.
- In a large 4-quart heavy-bottomed saucepan, stir together the condensed milk, cream, sugar, salt, and butter. Place over medium heat and bring to a boil, stirring constantly.
- Once boiling, reduce the heat to low and continue cooking and stirring until a candy thermometer reads between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of the mixture dropped into cold water forms a soft ball that flattens when removed. This should take about 20 minutes.
- When the mixture reaches a light tan color, remove from heat and beat vigorously with a wooden spoon until it cools and thickens, turning from smooth to grainy. Mix in vanilla extract if desired.
- Pour the mixture into the prepared pan, avoiding any crystallized bits from the bottom of the saucepan. While still warm, score the tablet into 2-inch squares with a paring knife.
- Allow to cool for 6 hours to overnight until set. Cut into squares with a serrated knife and store at room temperature in an airtight container.
