Ingredients

  • 1 14 Ounces (oz) can sweetened condensed milk
  • 1 Cup cream
  • 4.5 Cups white sugar
  • 0.5 Cup unsalted butter, chopped
  • 1 Pinch salt, to taste
  • 1 Teaspoon (tsp) vanilla extract (optional)

Steps

  1. Generously butter a 13x18-inch sheet pan or two 8x8-inch square pans, and set aside.
  2. In a large 4-quart heavy-bottomed saucepan, stir together the condensed milk, cream, sugar, salt, and butter. Place over medium heat and bring to a boil, stirring constantly.
  3. Once boiling, reduce the heat to low and continue cooking and stirring until a candy thermometer reads between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of the mixture dropped into cold water forms a soft ball that flattens when removed. This should take about 20 minutes.
  4. When the mixture reaches a light tan color, remove from heat and beat vigorously with a wooden spoon until it cools and thickens, turning from smooth to grainy. Mix in vanilla extract if desired.
  5. Pour the mixture into the prepared pan, avoiding any crystallized bits from the bottom of the saucepan. While still warm, score the tablet into 2-inch squares with a paring knife.
  6. Allow to cool for 6 hours to overnight until set. Cut into squares with a serrated knife and store at room temperature in an airtight container.
